A small-scale, pastoral farm located on the Illinois/Wisconsin border about 10 minutes east of I94. We primarily raise old-breed hogs for their high-quality proteins and fats but also produce lamb, goat and meat chickens from our sustainable, pasture based systems.
RED WATTLE Hogs
Named for their red color and distinctive, fleshy “wattles” – a remnant of their genetics which date back to the 1850’s. A lean-type hog producing a flavorful, well-marbled pork that is not overly fatty. Their meat can either be pink or red depending on the cut and has a texture that can be described as “beefy.”
Ours come to the farm as day-old chicks from the hatchery and we raise them inside until they are feathered and ready to be transitioned into their “chicken-tractors” out in the pasture. These mobile coops protect the chickens from predators such as coyotes and hawks but also from the elements (sun, rain and wind).
The meat of the Mangalitsa pig is reddish (unlike the “other white meat” that Americans are accustomed to). highly marbled with creamy white fat that is high in omega-3 fatty acids and natural antioxidants. This is due to a natural diet that primarily consists of forage and barley.
HIGHEST QUALITY MEAT
Being high in protein and rich in many vitamins and minerals, pork can be an excellent addition to a healthy diet. High-quality protein is the main nutritional component of pork, making it useful for muscle growth and maintenance.
